The extra old Mimolette is a cheese originally from France and specifically from the regions of Basse-Normandie, Lorraine and Nord-Pas-de-Calais. This cheese is a famous French specialty! It is a cow's cheese with a natural and dry rind. Since September 27, 1997, it enjoys a sign of quality: Label Rouge.
A careful balance is needed between the cheese, the rough wooden boards, and the bricks of the cellars so that the Mimolette is well-matured. Both temperature and humidity are regulated to allow for this maturation. The curing process lasts from 2 to 24 months or even 30 months. A flavor of nuts will appear, at the same time as the Mimolette becomes brittle.
