Hercules is made from sheep's milk (origin: France / exceptionally: Spain), goat's milk (origin: Europe), coagulant of microbial origin, lactic ferments, salt.

Hercule is a pasteurized, mixed sheep's (50%) and goat's (50%) milk cheese, with an uncooked pressed paste, made by Dominique Bouchait, Meilleur Ouvrier de France, from the Les Fromagers du Mont Royal cheese dairy located in Montréjeau in the Haute-Garonne department in the Occitanie region.

Its crust, light brown to darker brown in color, is sculpted by mites, mites and real living dust, which pierce and shape it. This allows the cheese to air out and get its full flavor with a minimum ripening period of 11 months.

Its paste, very uniform and cream-colored, is supple and firm at the same time. It reveals a few clumps of tyrosine, an amino acid used in the composition of milk proteins and vector of taste, and also a sign of successful ripening.

On the nose, the Hercule offers a specific perfume of caramel.

On the palate, it is a creamy cheese, with the good taste of sheep's milk and the typicality of cheeses from the Pyrenees, containing fruity aromas of walnuts and hazelnuts with an original sweet flavor of caramel.
