The makers Marie Thérèse and Dominique make this delicious cheese on their own farm, located close to the village of Sainte Maure. Sainte Maure de Touraine is prepared from raw goat milk and then poured into cone-shaped molds.
The cheese is then removed from the mold lightly salted and sprinkled with charcoal, resulting in a bluish bloomy rind and a soft paste after at least 30 days of maturing. Sainte Maure de Touraine has a lovely white to ivory color on the inside and a delicate taste of goat, it may also have a hint of walnut depending on the season.
